These keto air fryer granola bars are much tastier and healthier than store bought granola bars and won't spike your blood sugar.

Yes these air fryer keto granola bars may take 3 cups of nuts and seeds but you can bulk it up with peanuts and use a lot of seeds like sunflower, pumpkin, chia, sesame and linseed.

This recipe delivers a big batch of granola bars and went into two batches into my food processor.

These keto granola bars are nice and crunchy and with just a hint of sweetness.

My kids loves these air fryer granola bars and had second helpings for breakfast.

These bars needs to cool down completely before slicing otherwise it crumbles. It also firms up in the fridge because of the coconut oil.

The inspiration for this recipe was from a low carb lunches pdf I bought from ditchthecarbs.com. I tested and adjusted this recipe to be an air fryer recipe.

Steps to make Air Fryer Keto Granola Bars

Step 1. Process these ingredients in a food processor

1 cup mixed nuts and peanuts

Half cup seeds

1 tablespoon cocoa nibs or sugarfree chocolate chips

2 tablespoons tahini or nut butter

1 teaspoon vanilla essence

1 teaspoon cinnamon

Pinch salt

1 to 2 tablespoons Granular low carb sweetener of choice

1 egg

Half teaspoon xantham gum (optional but recommended)

Step 2. Repeat step one

Take out the processed nut mixture and add to an air fryer baking pan.

Repeat step one, processing more ingredients, the same amounts as step one. Add to the rest of the processed ingredients to the pan and smooth with a spoon.

Step 3. Air fry until browned

Air fry at 165 c / 320 f for 15 to 20 minutes or until brown on top.

Step 4. Let cool completely

Let cool completely before slicing.

Step 5. Store in the fridge until hardened

Place the baking pan covered in the fridge for at least an hour before serving. It will crumbles when warm.
