Paleo Pumpkin Bars
This recipe for Paleo pumpkin bars is great for when you have pureed pumpkin or for when your family don't like to eat pumpkin on its own.

These Paleo pumpkin bars are moist, tender, tasty and very healthy too!
Nowadays I air fry some pumpkin chunks specially to be used for pumpkin baked goods, such as these pumpkin bars. My family don't like to eat pumpkin on its own but they love pumpkin in baked goods.
These bars are incredibly healthy and you can feel good giving them to your kids for a snack or breakfast. It's also great for dessert. Try it with some coconut whipped cream for a treat!
I used peanut butter but you can easily make almond butter from almonds in your food processor if you want to.
Steps to make Paleo Pumpkin Bars
Step 1. Mix all the ingredients together
Mix these ingredients together: 1 cup (245 g) pumpkin purée
1/2 cup (130 g) smooth almond butter
1/3 cup (64 g) coconut palm sugar or sweetener of choice
1 tablespoon (7 g) coconut flour
1 tablespoon (7 g) pumpkin pie spice
1 tablespoon (20 g) maple syrup
1/2 teaspoon vanilla extract
2 eggs
1/4 teaspoon baking soda
1/8 teaspoon sea salt
Step 2. Bake or air fry the bars
Add the batter to a baking pan and bake or air fry until done. Bake or air fry at 180°C for 20 to 30 minutes. Check after 20 minutes if air frying.
Step 3. Enjoy!
Enjoy with some coconut whipped cream.
